To introduce and promote 30 culinary icons of the archipelago, the Directorate of Special Interest, Conventions, Incentives and Event, Ministry of Tourism and Creative Economy, teamed up with the Bali Tourism Institute (STP) Nusa Dua Bali to hold a workshop. It entitled “Workshop of 30 Icons” and was held at the local campus, Tuesday (Jun 11).
The event was attended by Subdivision Head of the Culinary and Shopping Tourism Development Agustin Mulyawati, the Head of Bali Government Tourism Office Ida Bagus Kade Subhiksu and an expert in the archipelagic cuisine William W Wongso. Meanwhile, the participants consisted of the academicians, practitioners of the archipelagic cuisines, chef of tourism school, culinary entrepreneurs and the hospitality field.
Aside from the delivery of subject matter and presentation of 30 archipelagic cuisines, the event taking place during three days was also filled with practice as well as menu processing. It was started with coaching clinic on the processing of 30 traditional Indonesian cuisines in the Kitchen Stadium of the STP directly guided by Chef Vindex Tengker, an Indonesian culinary expert. The coaching clinic was intended to equate perception related to processing, ingredients as well as flavor.
Deputy Director I of the STP Nusa Dua, Dr. Wisnu Bawa Tarunajaya, said the workshop was expected to find an alternative way related to the preparation, processing and presentation of 30 culinary icons of the archipelago in order it could be done fast and excitingly. Typically, the process of preparing and processing took a long time, while tourists wanted to quickly enjoy it.
According to him, the introduction and development of local culinary workshop was very beneficial to the campus because it was in line with the program of the Center for Culinary Studies owned by the STP. This institution and culinary entrepreneurs and hospitality circles were expected to offer local cuisines to travelers. Likewise, the hospitality schools were also expected to open the archipelagic culinary department. Meanwhile, the expert of archipelagic cuisine, William W Wongso, stated that 30 icons of the archipelagic cuisines should continue to be promoted at home and overseas. “Currently we are aggressively promoting the archipelagic cuisine in the Netherlands, Germany, Spain, England and Mexico in collaboration with the Department of Foreign Affairs,” he said.
