Buleleng Northern Lights

Singaraja Shio Bak

Shio bak is a traditional food from Buleleng. This food is very popular with tourists, especially those of Tionghoa descent and the people outside Buleleng who are vacationing in the north Bali area. The main ingredient is pork. The way to make it is quite simple. The pork is boiled in hot water, which is already mixed with flavors such as soy sauce, garlic, pekak (kind of Chinese flavors), pepper, salt and spices

After the meat is cooked it is removed, and the boiled water kept to one side. A dough is made from kanji flour mixed with kuah (thin sauce) that was used to boil the meat, and then tauco (fermented bean paste used as a condiment) is added. The way to serve is quite simple. Slice the meat, then add the kanji flavor. Add slices of acar (pickles) & chili.
It is very easy to find shio bak stalls in Buleleng, especially around the Kampung Tinggi area, Ahmad Yani Street, Seririt and other areas. Shio bak is a Chinese food, which is combined with Buleleng local flavors so that it has its own special characteristics. (ole)
