Denpasar Rice
A
popular rice among the people of Denpasar
is nasi jinggo. It is a small portion of
rice with meat or fish, similar to what
is at many stalls or restaurants. The main
difference is that nasi jinggo
is usually a smaller portion.
Jinggo
rice along with the meat or fish usually
has some fried tempe, a fermented soya-bean
cake, saur noodles, and sometimes chicken.
This and the hot chili sambal makes the
nasi jinggo taste. Another characteristic
is that jinggo is wrapped in banana leaf.
The rice known as Denpasar rice
has been on sale since the 1980s,
and can be found at temporary roadside stalls
for Rp 1000 pe packet. It is a well-known
Balinese favourite, and even the President
of the Republic, Megawati Sukarnoputri ate
nasi jinggo in welcoming the New Year of
2003 at the Tampaksiring Presidential Palace.
Putri, a nasi jinggo seller claims that
good quality and taste of the rice is paramount.
During one evening, I can sell between
200 - 300 packets of rice, even though I
am not in a particularly busy part of town.
One of the biggest problems, according to
Putri is how to get the banana leaf for
the wrapping.

for making the spices to produce sambal
for tempe (fermented soya beans) Just slice
the tempe and mix it with shallots, garlic,
and chili. Fry and add coconut sugar in
sufficient quantity for sweetness. (sana)
