Plecing Kangkung
All
year round, vegetables like kangkung or
water spinach (Ipomoea reptansi) can be
found all over Bali. The local people use
this vegetable in some of their favourite
recipes for a plain vegetable dish or as
an ingredient in a mixed vegetable dish.
Here we will introduce you to one such popular
recipe of plecing kangkung or kangkung in
a hot chilli sauce.
Ingredients:
2
bunches fresh water spinach
2 red chillis
1 clove garlic
3 shallots
1 tomato
2 tbsp. cooking oil
½ tsp. baked shrimp paste
1 tsp. brown sugar
salt to taste
Method:
- Clean
the vegetables well.
- Boil
the water spinach briskly. Do not overcook.
- Take
the water spinach out of the pan, cut
through and then squeeze to remove the
water.
- Stir-fry
the spices (chilli, tomato, shallot, and
garlic).
- Having
stir-fried, grind the spices with the
baked shrimp paste, brown sugar and salt.
- Mix
the spices together with the water spinach.
- Ready
to serve.
