“Plecing Kacang Panjang” Jaja Wajik

A nother special Balinese dish is plecing kacang panjang or long beans in a shallot dressing. This kind of bean grows up to 50 centimeters long. Local farmers grow it in the rice fields after the paddy harvest, or it’s planted simultaneously on the pematang (rice field’s bund) with the paddy season. When cooking this long bean, it is a good idea to chop each bean to about 20 cm long.
Ingredients:
500 g long beans
250 ml coconut milk
2 cloves garlic
3 cloves shallots
2 small chilies
¼ sachet of wangen spices (consisting of pepper, coriander, etc.)
3 slices of fresh galanga
3 slices of turmeric
5 slices of kencur
1 kaffir lime
1 tsp. salt
1 tbsp. cooking oil
Garnish : fried shallots and chillis.

Method:
1. Boil the long beans until well-done, lift out and drain. Afterwards slice in half lengthwise.
2. Make sure spices are chopped. Stir-fry and add coconut milk. Stir well until the sauce thickens.
3. Then take out the spices.
4. Mix the boiled long beans with the above spices.
5. Serve with garnish and squeezed lime juice.
