Batun
Salak Cake
Non-rice
based cake has often become a topic of governments
campaign in promoting of food diversification.
Here is one cake made of cassava. It resembles
the seed of snake fruit thats why
Balinese called it jaja batun salak.
Ingredients:

300 g grated cassava
- 150
g brown sugar
- 100
g grated coconut
- salt,
and vanilla essence
Method:

Form the batter of grated cassava to the
same size as the seed of salak or snake
fruit. Steam until well one;
- Make
sauce of brown sugar with the flavor of
vanilla essence and pandan leaf in the
boiling water;
- Put
the steamed cassava into the sugar sauce
and stir well;
- Take
out and serve on a plate with grated coconut.

Traditional Mixed Vegetables
Mixed
vegetables or jukut urab is
generally a popular food made in every household
of the Balinese, especially in rural areas.
Nevertheless, it is on sale at warungs
or tiny restaurants. There are various raw
materials used to make the food. A team
women of Denpasars village of Ubung
Kaja was busy cooking mixed vegetables on
Saturday, 24 May 2003 as part of Denpasars
PKB annual Bali Arts Festival.
Following are the raw materials consisting
of various leaves (expressed in Balinese
terms) used to make mixed vegetable:
- kayu manis
- kelor
- pepaya (papaya leaves)
- beluntas
- bayam (spinach)
Spices
for the cooking are as follows:
- 1 teaspoon of baked onion,
- 1 teaspoon of baked garlic,
- 1 teaspoon of baked chili,
- 3 sheets of citrus fruit,
- half a coconut,
- salt to taste.
Preparation
We should cook all raw materials until finished.
Cut onion and garlic into thin sheets ahead
of baking them until red. Bake sliced chili
half way. Burn the grated coconut until it
gives off a fragrant and delicious smell and
then grate it. All raw materials, spices,
and the grated coconut form a mixture, adding
salt to taste. The addition of citrus sap
increases the aroma. This makes enough for
four people.
Health
benefits
All ingredients of mixed vegetables have
health benefits, such as helping nursing
mothers to produce milk, healing some diseases,
eliminating toxins and cleansing the blood.
