Shredded
Yam Cake
As
matter of fact, the Balinese have various
kinds of distinctive cakes as other regions
across Indonesia do. Some are specially
made for offerings, while others for consumption.
One of those cakes that are made for both
purposes is shredded yam cake. It may be
called serbet cake in Balinese or it may
vary to some regions. This cake is usually
presented in the offering for paddy plant
rituals called miseh. When the husk of paddy
still green this ritual is performed to
invoke blessing to God in order it can flourish
well until harvest time. This brownish sweet
cake is made of thinly sliced yam, just
like bean sprout. Having sliced, it is deeply
fried until well done or crispy. For the
sauce, liquid mixture of palm sugar is already
prepared. When the fried yam has been drained,
it is then mixed with this sweet sauce.
The last step is to shape the fried yam
circularly or to taste. (BTN/029)
