the Appetite With Cucumber and Carrot Pickles
Korea
has a wide selection of typical spicy pickled
cabbages or "kimchi" as its national
dish. Indonesia and Bali in particular also
has similar food known as acar. It is regularly
made from cucumber, carrot, chili and the
like. Savoring fried rice or noodles seems
incomplete without the presence of this
dish and hot sambal.
Ingredients:
500g cucumber, 300g carrot, 3 red chilli
(seeded), 2 tsp refined sugar, 3 tbsp white
vinegar, 1 tsp (to taste) salt.
Method:
1. Peel and cut the cucumber lengthwise
into small slices and then crosswise for
some three cm. Discard its seeds. Do the
same process to carrot.
2. Put the slices of cucumber and carrot
into a container. Add the whole chili, vinegar,
sugar and salt.
3. Mix them thoroughly to make the spices
well absorbed and wait for an hour until
the water of cucumber goes out. It’s
ready to serve. Optionally, it can be kept
in a closed container to get a better taste.

Crab, One Denizen of the Deep,To
Fry with Oyster Sauce
From
the Indian Ocean and seas at the vicinity
of Bali Island comes a mouth-watering range
of seafood resources having its own typicality.
Some have been regularly caught by local
fishermen and could be found at local fish
markets or fishermen villages such as at
Kedonganan, Sanur, Serangan, Pengambengan,
Medewi, Kusamba and elsewhere. One of them
is crab (dozens of varieties). Seafood like
this crab at all times extends endless inspiration
to chefs to provide you some piquant delicacies.
Ingredients:
1 medium crab; 125ml cooking oil for frying
the crab
Sauces: 1 red chilli; 2 candlenuts; 1 green
chilli; 2 cloves garlic; 1 stalk leek; 1tbsp
margarine; 2 tbsp oyster sauce; 1 red chilli
(thinly sliced)
Method:
1. Uncover the shell of crab and cleanse
thoroughly. Fry it until well done or its
shell turns reddish.
2. Ground all spices and stir-fry until
fragrant. Add oyster sauce and mix well.
Wait for a moment and take out when it’s
been slightly thick.
3. Put the crab onto a plate and add the
sauce. It’s ready to serve. (BTN/029)
