Fried Rice

Fried rice is a favorite amongst the Balinese. Its main ingredient is white rice, mixed with various spices. The spices include garlic, shallots, large onions, large red chilies, tomatoes or chili sauce, pepper, “prei”, ketchup, salt, egg and chopped meat (usually chicken, pork or beef), or sea fish (for example shrimps). Although there is a basic recipe for fried rice, depending on the chef or the restaurant, the end product will have its own variations and secrets. Photo (above) shows fried rice prepared by Sanur’s Wayang Café complete with garnishing and pickles.
