Delicious Salad of Balinese Pomelo
Balinese community has a special fruit salad or what the so-called rujak. It is made of fresh fruits mixed with a selection of spices to produce a distinctive flavor. At least, there are three flavors used in the sauce namely spicy, sweet and sour. There are many different types of fruit salad whose name adapted to the fruit used as the main ingredient. One of them is Balinese pomelo salad or rujak juwuk Bali. This ingredient or usually called jerungga in Balinese is liked best by many people. In the heat of the sun, this fruit salad is in demand because it produces water tasting sweet mixed with sour.
Its lovers are very diverse as well such as children, teenagers, parents to toothless grandparents. When squeezed, it will produce water tasting fresh. The salad is prepared by adding sauces onto the ingredient. Salad of this type is usually sold in roadside modest stalls characterized by the presence of a pestle and mortar on the table. To prepare it, the outer skin of the pomelo should be peeled out. Then, the flesh is removed from the inner skin. Prepare appropriate sauces according to taste. By and large, the sauces in use consist of tamarind paste, shrimp paste, salt and chili to taste. Then, it is added with sweetener like palm sugar. Having mixed, stir them well to produce good flavor.
Formerly, people prepared mixed salads with young banana tree, belonging to stony banana variety. Its sauce was also very simple, so that it helped digestion in the stomach smoother. Unfortunately, the Balinese pomelo is increasingly rare today so that it is very difficult to find the bigger ones. Now, it is brought in from Java and other regions in the archipelago. As information, Balinese pomelo has a dark green skin and red flesh. When being unripe, it will taste sour, but after turning perfectly ripe it will taste sweet. (BTN/015)
