Chef of Mawar Restaurant, I Made Mudiana, said that Grilled Chicken with Green Chili was carefully prepared from selected ingredients such as chicken, vegetable, water spinach, green peppers and special seasonings owned by Mawar Restaurant. “The unique and distinguishing feature of this menu is the green chili and spicy taste that fits to be enjoyed by foreign tourists,” he explained. Every single menu was created with high precision in the matter of color, styling and harmonious taste. The menu had a superior taste because the ingredients were selected from fresh chicken to be roasted. Meanwhile, the water spinach was processed into plecing to add to the impression of Balinese traditional element. To make it better, the menu was also added with two kinds of special condiment namely green chili and raw condiment.
When all the ingredients had been ready, added Mudiana, the next step was presenting it by using triangular plate. “Firstly, the water spinach in plecing spice is placed on a plate and then stacked with grilled chicken. Beside it is also served the steamed rice cone, green chili sauce and raw condiment. Ultimately, the grilled chicken is smeared with a green chili sauce to avoid it from being dry,” he explained.
Mudiana explained the new menu would be launched in January coinciding with the opening of a new restaurant and bar at the hotel. “The menu is ascertained to be a favorite food for tourists from Australia and the Netherlands in particular,” said the man doubling as the Food & Beverage Manager of the hotel.
